Fruitcake
Fruitcake is a family favourite and great to eat when meeting up with family or friends because it is so simple to make!
Looking outside at the rain I thought it was essential to bake something that would cheer my family up on such a gloomy and melancholy day.

Ingredients:
- 4oz butter
- 4oz brown sugar
- 4oz self raising flour
- 4oz plain flour
- 5 eggs
- 12oz mixed fruit
- 3tsp ground cinnamon
- Dash of milk
1. In a loose bottom tin, greece the bottom and sides with butter and cover with grease-proof paper
2. Preheat the over to gas mark 4/ 180C/ 350F
3. Cream the butter and sugar together in a large bowl
4. Add the eggs one at a time slowly to the mixture
5. Fold in both of the flours to the mixture
6. Add the fruit and ground cinnamon to the bowl
7. Mix together and add a splash (1tbs) of milk to loosen the mixture
8. Place into the tin and smooth the mixture out
9. Bake on a middle shelf for 1 hour and 15 minutes - checking occasionally
10. Take out of the oven and cool
There you have it, simple fruitcake, perfect for a rainy day (which there are plenty of in Britain!). Enjoy xx
