Doughnut Diaries - Hula Hoop Inspired Miniature Baked Doughnuts
I wanted to take something classic like doughnuts and turn them into something different, unique and eye catching... to get people talking! These could be a focal point of a party or gathering as it is a twist to a much loved classic crisp and doughnut!
On to the Recipe: - you'll need a miniature doughnut pan
Ingredients:
- 150g margarine
- 200g white sugar
- 1 egg
- 120 ml milk
- 225g all purpose flour
- 1tsp vanilla extract
- 2 tsp baking powder
Topping -
- 3 tbsp butter
- 3 tbsp sugar (I used Butter scotch sugar which I found at LakeLand - shown to the right)
- Preheat the oven to Gas Mark 3/ 170ºC / 325ºF
- Lightly oil miniature doughnut
- In a medium bowl, cream together the butter and sugar
- Add the egg, milk, and vanilla and mix until combined - don't worry about the mix looking curdled.
- Mix in the baking powder
- Stir in the flour just until combined
- Transfer mixture into a piping bag (or alternatively you could use a handmade greese-proof paper one) and snip the end of.
- Pipe into the pan only filling ½ way full.
- Bake for 8-10 minutes or until golden brown
- Allow to cool slightly before topping them
- Melt the butter for the topping and combine with the sugar
- Dip each doughnut lightly in butter/sugar combination and set aside to cool
