Healthy Flapjacks

These healthy flapjacks are amazing, they're not only good for you, but taste so much better than the normal 'boring' flapjacks! As it is lent, people try to give up fatty food - like chocolate or biscuits, so this can be a healthy alternative (even if you don't celebrate lent then this recipe can still be useful as they are delicious and so healthy!). I've been loving eating these in the morning as they are great to grab for a quick and easy breakfast (as I know many of us don't have time to properly sit down for it!) or for a snack.




Onto the recipe: 
Ingredients: 
50g butter
3 tbsp maple syrup (you could use golden syrup or honey as an alternative) 
2 tbsp peanut butter
2 mashed bananas
1 peeled and grated apple
250g oats (I used porridge oats but you could use rolled oats) 
185g mixed dried fruit
85g mixed seeds (I used sunflower seeds)
100ml hot water
 
Recipe:
1.  Heat the oven to Gas Mark 3/ 170C/ 325F
2. Grease line a 20cm square/ rectangular baking tin with grease-proof paper
3. Heat the peanut butter, butter and maple syrup in a pan until it is melted
4. Add the mashed banana, apple and 100ml of hot water and stir until combined
5. Tip the oats, dried fruit and seeds into a large bowl 
6. Pour in the apple and banana mixture
7. Stir until all the oats, fruit and seeds are coated
8. Tip into the cake tin and press down with a spatula until the surface is level
9. Bake for 50 minutes (or until golden brown) 
10. Gently score the mixture to the sized flapjacks you want
11. Leave to cool in the tin
12. Cut out the flapjack pieces
13. Store in an air tight container - they'll keep for up to 3 days
