Pancakes with Bacon and Maple Syrup
Pancake day is coming up which means there is a fabulous excuse to indulge in both sweet and savory delights. These pancakes mix both the savory salty bacon and the sweet maple syrup and tastes incredible (...but not a good recipe if your aiming to go on a diet.... But it's pancake day; you can start tomorrow!)
Onto the recipe -
Ingredients:
Recipe:
1. Put the flour and pinch of salt into a mixing bowl
2. Make a well in the centre of the flour
3. Crack the eggs in the middle of the well a
4. Pour in around 50ml milk and 1tbsp oil
5. Whisk the mixture from the centre and then combining the ingredients around the edge (I prefer to use an electric whisk)
6. Beat until you have a smooth paste
7. Add more milk to loosen the thick batter - you should have the consistency of slightly thick single cream (you probably wont have to add all the milk suggested)
8. Now the mixture is ready fry or grill some bacon until it is crisp
9. Heat a pan over a moderate heat and put a splash of oil in it
10. Ladle an even thin layer oven the hot pan
11. Leave it for around 20 seconds and the flip it over - it should be golden brown
12. Repeat for the rest of the batter
13. Stack up and chop the bacon into slices
14. Drizzle over the maple syrup

- 300ml semi-skinned milk
- Pinch of Salt
- 1tbsp sunflower / vegetable oil (and extra to fry bacon and pancakes)
- Bacon (as many rations as you would like)
- Drizzle of maple syrup

Great post! I miss amazing american pancakes with maple syrup but living in England means pancake day tomorrow! I have the Nutella ready on standby since my very English husband thinks the idea of bacon and Maple syrup is wrong!

Thank you! My family are hesitant about trying bacon and maple syrup too, but I'm trying to assure them that it is the best pancake flavouring - I'd have it all year round if I could!
