Rice Krispy, Peanut Butter Watermelons

Ingrid Nilsen recently uploaded a YouTube video 'here' where she explained how to make these incredible watermelon pieces, so I thought I try them out. They're so clever and imaginative, perfect for a summer party! 

On to the recipe:
Ingredients: (These are in cups so here is a conversion chart if you are unable to find any measuring cups): 
  • Oil (preferably a spray)
  • 4 cups Rice Krispies
  • 1/2 cup of Honey
  • 4 tablespoons of Peanut Butter
  • Red and Green food colouring (It would be better to use a liquid food colouring because I found when using a gel colouring you need a lot of it to coat all the cereal!)
  • 1 victoria sponge tin
  • Cubed Brownies (or a healthier option would be chocolate covered raisins or chocolate covered pomegranate seeds)  
1. Spray the tin and spoon with oil so the mixture doesn't stick
2. Add 2 cups of Rice Krispies, 1/4 cup honey, 2 tbsp Peanut butter and a few drops of green food colouring into a large bowl 
3. Stir until all the mixture is covered and coated green
4. Cover the rim of the tin around 4 cm thick with the green mixture - this will look like the watermelon rind.
5. Add 2 cups of Rice Krispies, 1/4 cup honey, 2 tbsp Peanut butter and a few drops of red food colouring into a clean large bowl 
6. Stir until all the mixture is covered and coated red
7. Place the red mixture in the center of the tin and flatten with the back of the spoon. 
8. Place the chopped brownie pieces (about 1/2cm thick) in the red mixture so you can still see them. 
The mixture should now look like this:



9. Leave in the fridge to set for a minimum of 2 hours but over night would be best
10. Once cool cut triangular pieces to resemble a watermelon slice


There you have it, simple but impressive peanut butter 'watermelon' slices!
